Title: Pruning olive trees

I want someone to prune 4 olive trees.  I want them pruned the way the locals do it in the olive groves not savaged or topiaried the way Brit gardeners have in the past.  Any recommendations?

Have a word in the Ayuntamiento an see if they can suggest someone or possibly one of the Ladies in your farmacia might know of someone.  It's not as if there is a whole field of trees and would only take someone who knew what they were doing a morning.
