Marmalade

Today I made 2 batches in separate pans.  Identical weights and ingredients.  Tested one pan, ready to jar up, didn't test the other pan as I assumed it would be the same. One batch is perfectly set, the other no, so will have to reboil tomorrow and end up with a sticky kitchen again.  :angry:

I wonder if the pans do not circulate the heat at the same rate?  Is that possible?

Different materials for the pans.  My gran had a huge pan that she used only for jams.  It looked like copper
